Coat a skillet lightly with cooking spray and place over medium heat. Add jerk seasoning, onion and orange juice. Stir and cook until onion is tender, 3-4 minutes. Remove from heat.
Add papaya and tomato. Sprinkle with cilantro, then stir gently to mix.
Serve over baked fish, chicken or pork.
